Add the shredded coconut, coconut milk, peanut butter, date syrup and vanilla extract to a mixing bowl. Mix well.
Cover the bowl with foil and leave in the fridge for one hour.
Using a spoon, scoop up the mixture and form balls.
Melt the chocolate in a microwave or stovetop. Dip the balls into the chocolate and coat them completely.
When the balls' chocolate shell has hardened, they are ready to be devoured!
